The cucumbers are pickled in vinegar and are spicy. They are simply named Khiar Shoor Irani, which means Iranian Pickled Cucumber

Persian cucumbers are thin-skinned and only grow to be about five to six inches long and remain quite narrow. These baby cukes are nearly seedless and extra crisp rather than watery, and have a mild, sweet flavor that’s easy to fall for.

Torshi is made with garlic, chili peppers, celery, cauliflower, carrots, beets, shallots, cabbage, aubergines (eggplant) and other vegetables, and dried aromatic herbs pickled in vinegar or brandy, salt, and different spice mixtures, which usually include whole black peppercorns, ginger, etc. Persian-style torshi includes more vinegar, while Turkish style turşu includes more salt as an antibacterial agent.

So what’s the difference? Both are crunchy, full of nutrition and delicious, but cucumbers are tasty, fresh green fruits that are often eaten raw and called a vegetable, whereas pickles can include any food that has been preserved through a process of natural fermentation or using a vinegar brine.
